I am currently trying to eat healthier and actually eat three meals per day, which is something I find hard to do. I am still doing a blog post all about the reasoning behind my 'lifestyle change', but I thought that I would share with you another recipe, which is great for both lunch & dinner.
Ingredients
4-6 Sweet Potatoes
(Depends on how big your quiche pan is/how big potatoes your are)
Olive Oil Spray
1 Large bag of Spinach
1/2 Small Onion
1 Clove of Garlic
4/5 Eggs
(Again, depends on how big your quiche pan is)
1 Cup of Grated Mozzarella
1/2 Cup of Goats Cheese
Salt, Pepper, Herbs (chives/dill) to taste
Asparagus for the top
You could also add bacon/parma ham, if you wanted to add meat into this dish.
Method
Peel the potatoes and slice thinly. Lay the slices into your quiche dish like a crust, spray with oil, and bake for 10/15 minutes at 200C/fan.
Boil a pan of water, and boil spinach until wilted. Whilst this is happening, fry your sliced onion and crushed garlic clove until golden brown. Drain spinach, and add to onion/garlic mix, off the heat.
In a bowl, blend the eggs, mozzarella, herbs & goats cheese.
Add the spinach mix to the egg mixture. Season to taste.
(You would add your cooked meat at this point too.)
Pour into the potato crust, and place asparagus on top.
Bake for 40 minutes at 150C/fan, until firm & brown.
Serve warm or cold.
I had this for dinner tonight, served with a salad, and I really enjoyed it.
I think next time I will try it with the bacon in it too.
