Lifestyle Thursday - My Paella Recipe
I thought that I would do something a bit different for today's lifestyle post. I have done odd baking recipes on here, but never a full recipe post of a dinner.
So here is my recipe for a paella. I wouldn't say I was the best cook in the world and it isn't the most authentic paella, but it tastes good. If you wanted it to taste like a more traditional paella, add 1tsp of turmeric. I would of added it, but every shop near me was out of turmeric. Typical!
INGREDIENTS
- Olive oil
- Sea salt
- Black pepper
- Sweetcorn (1 tin)
- 1 bowl of Frozen prawns (defrosted) / Fresh prawns
- 1 bowl of Chicken breast slices (defrosted) / Fresh chicken breast slices
- 6 Cherry Tomatoes (cut into 4)
- Peppers (as much as you want)
- Chorizo (as much as you want)
- Chicken stock 600ml
- 300g long grain rice
- 1 lemon (cut into wedges)
- Red onion (as much as you want)
- Prosciutto ham (as much as you want)
METHOD
1- Heat at little of the olive oil in a large pan/wok.
2- Fry the onion and chorizo. Let the oils come out of the chorizo.
3- Add the chicken and warm through, letting the chorizo oils cover the chicken.
4- Add the dry rice and let the remaining oils cover the rice.
5- Add the stock and stir. Season with salt and pepper.
6- Bring to the boil.
7- Simmer until nearly all the stock has been absorbed and rice is practically cooked.
8- When rice is nearly cooked and stock is nearly absorbed, add the ham.
9- The add the prawns, sweetcorn, peppers and tomatoes into the mix.
10- Stir, make sure rice is cooked/all stock has gone, and serve.
Serving suggestion :
In a bowl with a wedge of lemon. Squeeze lemon onto paella before eating.
